This guide is not about replacing the recipes that shaped your family. It is about taking a closer look at how we prepare, cook, and store the food we already love.
As we move through each category, I will gently show you where the evidence is strongest, what is most worth avoiding, and where a thoughtfully vetted replacement truly makes a difference. The way we prepare, cook, and store our food influences not only what we eat, but also what quietly comes along with it. Four everyday categories deserve the most attention. Cans, where many linings can transfer hormone-disrupting compounds into food, particularly acidic foods like tomatoes. Nonstick cookware, where PFAS-based coatings can degrade with heat and wear over time. Plastic, which transfers more of its chemical components and microplastics into food when exposed to heat, acidity, or repeated use. And finally the stove itself, since cooking, especially with gas, produces fine particles and other pollutants that make the kitchen one of the largest contributors to indoor air pollution in many homes.
The few things that touch your food every single day are worth getting right. The encouraging news is that many of the highest-impact changes cost little, or nothing at all.
Cookware
If you are wondering where to begin, start with the pan you reach for most often.
Conventional nonstick cookware is typically coated with PFAS-based materials that gradually wear down through heat, scratches, and everyday use. At higher temperatures, those coatings can release particles into both food and the air above the stove. The good news is that the alternatives often last longer anyway. Stainless steel, cast iron, carbon steel, and high-quality ceramic cookware are durable, time-tested materials that can serve a kitchen for decades.
One small nuance worth knowing: many products marketed as "ceramic" are actually ceramic-coated, not solid ceramic, and the coating itself varies widely in quality and longevity.

Food Storage
Food storage is often less about the container itself than how you use it.
Heat and acidity are two of the biggest factors influencing how readily plastic can transfer compounds into food. That is why the simplest rules are also the most effective: never heat food in plastic, and avoid storing hot or highly acidic foods in plastic whenever possible. Microwaving leftovers in a plastic container combines heat, time, and direct contact, the very conditions that encourage greater migration.

Canned and Packaged Foods
The food inside the can is not usually the concern. The lining is.
Many canned foods, including tomatoes, beans, coconut milk, and soups, are coated with epoxy resin linings that have historically contained BPA or similar compounds such as BPS and BPF. Acidic foods tend to increase the migration of those compounds into food, yet packaging rarely tells consumers what type of lining was used.

Cutting Boards and Utensils
Every slice across a plastic cutting board removes a tiny amount of the board itself. Over time, that wear contributes microscopic plastic particles directly to the food you are preparing. Recent research has also raised concerns about black plastic kitchen utensils made from recycled electronics, with some products containing measurable levels of legacy flame retardants.
Wood and bamboo offer a remarkably simple alternative. They are durable, naturally antimicrobial when properly cared for, and do not shed plastic with every chop.

Water at the Sink
The kitchen sink is where most of your daily water actually happens: the glass you drink, the pot you boil, the rice that absorbs it, the soup that simmers in it, the coffee and tea that begin your day.
Municipal water is treated to be safe when it leaves the treatment plant, but by the time it reaches your tap, it may still contain chlorine or chloramine, PFAS, fluoride, lead from older plumbing, and microplastics. Of every exposure in this guide, this is one of the simplest to reduce.
Cooking makes water quality matter even more. As water evaporates, much of what was dissolved in it stays behind, becoming more concentrated in the food. Boiling makes water microbiologically safer, but it does not remove PFAS, heavy metals, or many other chemical contaminants. That is where a quality filtration system earns its place.
Start by learning what is actually in your water. Your municipality's annual water quality report and the EWG Tap Water Database can tell you what has been detected in your area, and whether your utility uses chlorine or chloramine, which helps determine the type of filtration you need. Then comes the step many people overlook: high-quality filtration often removes beneficial minerals along with unwanted contaminants, making remineralization an important final step. The Stove and Ventilation
This is the kitchen exposure almost no one thinks about.
Cooking is one of the largest sources of indoor air pollution in the home, particularly when using a gas stove. Research from Stanford University has shown that gas cooking can raise indoor nitrogen dioxide to levels associated with respiratory concerns, while additional research has found that gas burners can emit benzene, a known carcinogen, even when they are turned off.
The encouraging news is that one simple habit makes a meaningful difference: moving cooking emissions outside before they circulate through the rest of your home. A range hood that vents outdoors is far more effective than one that simply filters and recirculates the same air back into the kitchen.
Free Swap: Turn on your range hood every time you cook. Whenever possible, use the back burners, which are generally captured more effectively by the hood, and crack a nearby window to provide fresh make-up air. Leave the hood running for ten to fifteen minutes after cooking. Accessible: Install a carbon monoxide detector near sleeping areas and any gas appliances. Meaningful: A properly sized range hood ducted to the outdoors, or over time an induction cooktop as a long-term transition away from gas. Tea, Coffee, and Spices
Three of the healthiest rituals in many homes can quietly become sources of unnecessary exposure.
Many conventional tea bags are sealed with polypropylene, a type of plastic that can release microscopic particles into very hot water. Choosing loose-leaf tea in a stainless steel infuser is one of the simplest upgrades you can make.
Coffee deserves a word of its own, for two reasons. First, coffee beans are prone to mold during growing, drying, and storage, and some carry mycotoxins like ochratoxin A. Look for coffee that is specialty-grade and single-origin, freshly roasted, and ideally third-party tested for mold and mycotoxins, which the better roasters will state plainly. Second, most drip machines run hot water through plastic parts and a plastic reservoir, so how you brew matters as much as the beans. A glass pour-over, a stainless steel percolator, or a French press keeps plastic out of the cup.
Spices deserve attention as well. Recent testing by Consumer Reports found concerning levels of lead, arsenic, or cadmium in a number of popular spices, and the FDA has issued recalls and safety alerts for several cinnamon products because of elevated lead levels. These findings are not a reason to avoid herbs and spices. They are a reminder that sourcing matters.
Free Swap: Replace plastic-sealed tea bags with loose-leaf tea in a stainless steel infuser, and brew coffee in a glass pour-over or stainless percolator rather than a plastic drip machine. Accessible: Buy spices, especially cinnamon and turmeric, and coffee from companies that test for heavy metals or mold and openly share their results. Cleaning The Kitchen
Here is the principle that matters most: on the surfaces your food actually touches, fewer ingredients are better. You do not need a cabinet full of specialized sprays, most of which just add synthetic fragrance and residue to the exact counters where you prep dinner. Nature already gave us nearly everything a kitchen needs, and it costs a fraction of the price.
Three humble things do almost all the work. Baking soda is a gentle abrasive that scrubs pots, sinks, and stovetops and deodorizes without scratching. Distilled white vinegar cuts grease, dissolves mineral scale, and shines glass (keep it off stone counters like marble and granite, since the acid etches them). And hydrogen peroxide is a real disinfectant that kills bacteria on cutting boards and counters, then breaks down into nothing but water and oxygen, leaving no residue behind.
For a cutting board or counter, there is a resourceful trick worth knowing. Keep vinegar and hydrogen peroxide in two separate spray bottles. Mist the surface with one, let it sit a minute, wipe, then mist with the other. Used in sequence, this pair has been shown to kill more surface bacteria than bleach, with nothing toxic left on the surface your food touches. The one rule: never combine them in the same bottle, and never mix anything with bleach. Kept separate, they are simple and safe.
Free Swap: Clean with what is already in your pantry. Baking soda to scrub, vinegar to cut grease and shine glass, hydrogen peroxide to disinfect. And swap a synthetic dish sponge, which sheds microfibers, for a natural loofah or sisal scrubber. Accessible: A fragrance-free dish soap, and a bottle of castile soap that stretches into an all-purpose cleaner with just water.

Where Organic Matters Most
You do not have to buy everything organic. The goal is simply to know where it matters most. Each year, the Environmental Working Group (EWG) publishes two helpful lists based on USDA pesticide residue testing: the Dirty Dozen, where choosing organic can meaningfully reduce exposure, and the Clean Fifteen, where conventionally grown produce is generally considered a reasonable choice.
One additional step can further reduce surface residues. Soaking produce in a baking soda solution or using an ozonated water bubbler provides an extra level of cleaning, helping remove dirt, surface bacteria, and some pesticide residues. I especially like this for berries, leafy greens, and produce that can't be peeled. Think of it as a thoughtful complement to buying organic when possible, not a replacement for it.
The 2026 Dirty Dozen: Spinach, kale, collard and mustard greens, strawberries, grapes, nectarines, peaches, cherries, apples, blackberries, pears, potatoes, and blueberries. New this year, EWG also reported PFAS pesticide residues on many samples of Dirty Dozen produce.
The 2026 Clean Fifteen: Pineapple, sweet corn, avocado, papaya, onions, frozen sweet peas, asparagus, cabbage, cauliflower, watermelon, mango, bananas, carrots, mushrooms, and kiwi.

Building a Pantry
A short list of nutrient-dense, shelf-stable staples makes clean eating the default rather than an effort. Build it slowly, a few things each shop. Grains and legumes are the base: oats, brown rice or quinoa, and dried or jarred lentils and beans. Proteins that keep: eggs, and canned wild sardines and salmon. Good fats: olive oil, coconut oil, and a nut or seed butter. Flavor and basics: garlic, onions, canned tomatoes in glass, coconut milk, broth, raw honey, apple cider vinegar, a good mineral salt, and spices. And the freezer, your friend: wild fish, organic berries, and vegetables, all picked ripe and waiting.
Tricks Handed Down From Those Who Came Before
The best kitchens aren't built on expensive gadgets. They're built on small habits, passed from one generation to the next, that make cooking easier, reduce waste, and quietly care for the people around the table.
Give produce an extra rinse. Fill a bowl with water and add a teaspoon of baking soda. Let fruits and vegetables soak for 10–15 minutes before rinsing well. Research has found this removes more surface pesticide residue than water alone, making it especially worthwhile for the Dirty Dozen. An ozonated water bubbler offers another thoughtful layer of cleaning, particularly for berries and leafy greens.
Treat fresh herbs like flowers. Trim the stems, place them upright in a glass with an inch of water, and loosely cover them in the refrigerator. (Basil is the exception—it prefers the counter.) You'll often enjoy another week or two before they wilt.
Keep a broth bag in the freezer. Onion ends, carrot peels, celery tops, herb stems, mushroom stems, and parmesan rinds all become the foundation of a rich homemade broth instead of ending up in the compost.
Bring tired greens back to life. A bowl of ice water often restores crispness to lettuce and herbs that have begun to wilt.
Wait to wash your berries. Moisture shortens their life. Wash them just before eating to help them stay fresh longer.
Store onions and potatoes separately. Together, they encourage each other to spoil more quickly. Keep both in a cool, dark pantry—but not in the refrigerator.
Freeze bread before it goes stale. Slice it first so you can pull out exactly what you need. A quick trip through the toaster brings it back beautifully.
Let hot food cool before storing it. Transferring steaming food directly into plastic encourages greater chemical migration. Give it a few minutes to cool, then store it in glass whenever possible.
Your Action Plan
You do not need to do this all at once. Choose three things this week, then three more next week.
Start here, free and immediate: Never microwave in plastic. Run the range hood every time you cook. Switch to loose leaf tea. Move canned tomatoes to glass. Soak your produce.
Small swaps, under $30: A wood cutting board. A natural dish scrubber. One glass container replacing one plastic one each week. A stainless tea infuser.
When you are ready, bigger investments: One good stainless or cast iron pan, then a set. A countertop or under-sink water filter. A properly vented range hood, or induction down the road.
